Feast on Friday: Hale, Hale the Kale is Here - With Apples and Cheddar

So simple and a good reason to grow a lemon tree in your back yard. Or kale. Or apples! I wouldn't go so far as a cow.
Ingredients
  • 4 cups finely chopped curly kale, washed and rinsed
  • 2 T. coarsely chopped toasted almonds
  • 1 apple, cored and diced
  • 1 oz. sharp Cheddar, cut in ¼" pieces
  • 2 T. fresh lemon juice
  • Salt to taste
  • 1 small garlic clove, crushed
  • 5 T. olive oil
  • 2 T. grated Parmesan
Instructions
  1. Combine kale, almonds, apple and Cheddar in large bowl
  2. Whisk together the lemon juice, salt, garlic and olive oil
  3. Add to salad and toss well (I made this up to this step and refrigerated until dinner to help soften the Kale)
  4. Sprinkle with Parmesan and serve
